Roasted Peppers

To roasted sweet peppers in the oven, do the following:
1. Preheat the oven’s broiler
2. Cut the peppers into four to six pieces. Clean out the seeds.
3. Brush skin side with vegetable oil.
4. Place skin side up on a baking sheet covered with aluminum foil
5. Cook under broiler until the skins blacken.
6. Remove and place directly into a plastic bag and seal.
7. Let sit for 15 - 20 minutes until cool.
8. Remove from bag and peel off blackened skin. Enjoy!
