Carrot Cake
3 cups grated carrots
3 eggs
1 cup raisins
3/4 cup melted butter
2 cups flour
2 cups brown sugar
2 teaspoons baking powder
2 teaspoons soda
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon nutmeg
Mix all the ingredients together. Pour into a greased 9x13 pan. Bake 350 degrees for 45 minutes.
You can make cream cheese frosting by blending 10 oz cream cheese, 2 teaspoons of vanilla and 2 - 3 cups of powdered sugar!
