Apricot Mango Radish Salsa

1 ripe mango
Dried apricots, enough to equal 3 whole ones
12 large radishes
1 lime or lemon squeezed; add more juice to taste
2 red chillies, or 1 habanero, or 1 jalapeƱo (My favorite is the habanero - for any of these, remember to remove the seeds!)
3 tablespoons olive oil
sea salt to taste (this balances the sweet flavor of the fruit with the tangy flavor of the citrus)
3 tablespoons fresh, chopped cilantro (you can also use mint for a different flavor)

Chop all ingredients and mix together. Texture should be chunky. If you use a Cuisinart food processor, pulse just a couple of times.
