Apple Cider Glazed Turnips

1 1/2 tablespoons butter
1 pound turnips, peeled and cut into 1/3-x 2-inch sticks
1/3 cup fresh apple cider
1 1/2 tablespoons brown sugar
sea salt, to taste
ground pepper, to taste
1 tablespoon chopped fresh parsley


Preheat oven to 400°F. Grease a 9-x-13-inch baking dish with one tablespoon of butter. Arrange turnips in a single layer in the prepared dish.

Combine remaining two tablespoons butter, apple cider, brown sugar, salt and pepper in a small saucepan. Heat over medium heat until butter melts. Pour over turnips.
Cover baking dish tightly with foil and bake 20 minutes. Remove foil, stir turnips and bake, uncovered, 10 minutes. Stir turnips again and bake 10 to 15 more minutes, until turnips are fork tender and the liquid has reduced.

Taste and adjust seasoning. Sprinkle with chopped parsley and serve.
